- Beef chuck roast - 500 grams
- Guajillo chiles - 4 pieces
- Ancho chiles - 2 pieces
- Dried oregano - 1 teaspoon
- Ground cumin - 1 teaspoon
- Garlic cloves - 3, minced
- Onion - 1 medium, chopped
- Beef broth - 500 ml
- Apple cider vinegar - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cilantro - for garnish
- Lime wedges - for serving
Steps
- 1. Start by preparing the chiles: Remove the stems and seeds from the guajillo and ancho chiles, then soak them in hot water for about 15 minutes until softened.
- 2. In a blender, combine the softened chiles, minced garlic, oregano, cumin, apple cider vinegar, and a pinch of salt. Blend until smooth, adding a little soaking water if needed to reach a sauce-like consistency.
- 3. In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it on all sides until browned. Remove the beef and set it aside.
- 4. In the same pot, add the chopped onion and sauté until translucent. Then, add the blended chile sauce and cook for about 5 minutes until fragrant.
- 5. Return the seared beef to the pot, add the beef broth, and bring to a simmer. Cover and cook on low heat for about 1.5 hours, or until the beef is tender and easily shredded.
- 6. Shred the beef with two forks, mixing it back into the broth. Adjust seasoning with salt and pepper if needed.
- 7. Serve hot, garnished with chopped cilantro and lime wedges on the side.
