Ingredients
- Goat meat (cubed) - 500g
- Dried guajillo chiles - 3
- Dried ancho chiles - 2
- Garlic cloves - 4
- Cumin seeds - 1 tsp
- Oregano - 1 tsp
- Black pepper - 1/2 tsp
- Salt - 1 tsp
- Beef broth - 500ml
- Olive oil - 2 tbsp
- Bay leaves - 2
- Onion (chopped) - 1 medium
- Fresh cilantro (for garnish) - 2 tbsp
Steps
- Soak the dried guajillo and ancho chiles in hot water for about 15 minutes until softened.
- In a blender, combine the soaked chiles, garlic, cumin, oregano, black pepper, and salt with a little beef broth. Blend until smooth.
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
- Add the goat meat to the pot and sear for about 5 minutes until browned on all sides.
- Pour the blended chile sauce over the meat, add the bay leaves, and the remaining beef broth.
- Bring to a boil, then reduce the heat to low, cover, and simmer for about 1.5 hours, or until the meat is tender.
- Remove from heat and let it rest for a few minutes. Serve hot, garnished with fresh cilantro.
