Ingredients

  • Goat meat (cubed) - 500g
  • Dried guajillo chiles - 3
  • Dried ancho chiles - 2
  • Garlic cloves - 4
  • Cumin seeds - 1 tsp
  • Oregano - 1 tsp
  • Black pepper - 1/2 tsp
  • Salt - 1 tsp
  • Beef broth - 500ml
  • Olive oil - 2 tbsp
  • Bay leaves - 2
  • Onion (chopped) - 1 medium
  • Fresh cilantro (for garnish) - 2 tbsp

Steps

  1. Soak the dried guajillo and ancho chiles in hot water for about 15 minutes until softened.
  2. In a blender, combine the soaked chiles, garlic, cumin, oregano, black pepper, and salt with a little beef broth. Blend until smooth.
  3. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the goat meat to the pot and sear for about 5 minutes until browned on all sides.
  5. Pour the blended chile sauce over the meat, add the bay leaves, and the remaining beef broth.
  6. Bring to a boil, then reduce the heat to low, cover, and simmer for about 1.5 hours, or until the meat is tender.
  7. Remove from heat and let it rest for a few minutes. Serve hot, garnished with fresh cilantro.
