Ingredients

  • Beef chuck roast - 250 grams
  • Dried guajillo chilies - 3 pieces
  • Dried ancho chilies - 2 pieces
  • Garlic cloves - 3 pieces
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Beef broth - 250 ml
  • Lime juice - 1 tablespoon
  • Gluten-free burger buns - 2 pieces
  • Sliced cheese (cheddar or Oaxaca) - 2 slices
  • Fresh cilantro - 1/4 cup, chopped
  • Onion - 1/4 cup, diced
  • Avocado - 1/2, sliced
  • Sour cream - 2 tablespoons

Steps

  1. Soak the dried guajillo and ancho chilies in hot water for about 15 minutes until softened.
  2. In a blender, combine softened chilies, garlic, cumin, oregano, black pepper, salt, and lime juice. Blend until smooth.
  3. Cut the beef chuck roast into large chunks and season with salt and pepper. In a large pot, sear the beef on all sides until browned.
  4. Add the blended chili mixture and beef broth to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for about 1.5 hours until the beef is tender and shreds easily.
  5. Once cooked, shred the beef using two forks and mix it back into the sauce.
  6. In a separate pan, toast the gluten-free burger buns until golden brown.
  7. Assemble the burgers by placing a generous amount of birria on the bottom bun, topping it with a slice of cheese, fresh cilantro, diced onion, and avocado slices.
  8. Finish with a dollop of sour cream and place the top bun on. Serve warm.
