- Beef chuck roast - 250 grams
- Dried guajillo chilies - 3 pieces
- Dried ancho chilies - 2 pieces
- Garlic cloves - 3 pieces
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Beef broth - 250 ml
- Lime juice - 1 tablespoon
- Gluten-free burger buns - 2 pieces
- Sliced cheese (cheddar or Oaxaca) - 2 slices
- Fresh cilantro - 1/4 cup, chopped
- Onion - 1/4 cup, diced
- Avocado - 1/2, sliced
- Sour cream - 2 tablespoons
Steps
- Soak the dried guajillo and ancho chilies in hot water for about 15 minutes until softened.
- In a blender, combine softened chilies, garlic, cumin, oregano, black pepper, salt, and lime juice. Blend until smooth.
- Cut the beef chuck roast into large chunks and season with salt and pepper. In a large pot, sear the beef on all sides until browned.
- Add the blended chili mixture and beef broth to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for about 1.5 hours until the beef is tender and shreds easily.
- Once cooked, shred the beef using two forks and mix it back into the sauce.
- In a separate pan, toast the gluten-free burger buns until golden brown.
- Assemble the burgers by placing a generous amount of birria on the bottom bun, topping it with a slice of cheese, fresh cilantro, diced onion, and avocado slices.
- Finish with a dollop of sour cream and place the top bun on. Serve warm.
