Steps
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a bowl, soak the rinsed rice and almonds in 2 cups of water for about 4 hours or overnight for best results.
- Drain the soaking water and transfer the rice and almonds to a blender.
- Add the remaining 2 cups of fresh water, the cinnamon stick, vanilla extract, and a pinch of salt to the blender.
- Blend on high speed until the mixture is smooth and creamy, about 1-2 minutes.
- Strain the blended mixture through a fine mesh sieve or cheesecloth into a pitcher, discarding the solids.
- Stir in the maple syrup to sweeten the horchata, adjusting to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
