Ingredients

  • Long-grain white rice - 1/2 cup
  • Almonds - 1/4 cup
  • Cinnamon stick - 1
  • Vanilla extract - 1 tsp
  • Maple syrup - 2 tbsp
  • Water - 4 cups
  • Salt - a pinch

Steps

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a bowl, soak the rinsed rice and almonds in 2 cups of water for about 4 hours or overnight for best results.
  3. Drain the soaking water and transfer the rice and almonds to a blender.
  4. Add the remaining 2 cups of fresh water, the cinnamon stick, vanilla extract, and a pinch of salt to the blender.
  5. Blend on high speed until the mixture is smooth and creamy, about 1-2 minutes.
  6. Strain the blended mixture through a fine mesh sieve or cheesecloth into a pitcher, discarding the solids.
  7. Stir in the maple syrup to sweeten the horchata, adjusting to taste.
  8. Chill in the refrigerator for at least 30 minutes before serving.
