Ingredients

  • Cauliflower - 400 grams (for crust)
  • Mozzarella cheese - 200 grams, shredded
  • Cream cheese - 100 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Barbacoa beef - 200 grams, cooked and shredded
  • Low-carb pizza sauce - 100 grams
  • Red onion - 50 grams, thinly sliced
  • Cilantro - 10 grams, chopped
  • Avocado - 50 grams, sliced
  • Lime - 1, juiced

Steps

  1. Preheat your oven to 220°C (425°F).
  2. Steam the cauliflower florets until tender, about 10 minutes. Drain well and let it cool.
  3. In a food processor, combine the steamed cauliflower, mozzarella cheese, cream cheese, egg, almond flour, salt, and black pepper. Blend until a dough-like consistency forms.
  4. Spread the cauliflower mixture onto a parchment-lined baking sheet, shaping it into a pizza crust about 1/2 inch thick. Bake for 15-20 minutes until golden and firm.
  5. While the crust is baking, prepare the barbacoa beef by shredding it if not pre-shredded.
  6. Remove the crust from the oven and spread the low-carb pizza sauce evenly over it.
  7. Top with the barbacoa beef, red onion slices, and additional mozzarella cheese if desired.
  8. Return the pizza to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
