Ingredients

  • Beef chuck roast - 500 grams
  • Onion - 1 medium, diced
  • Garlic - 4 cloves, minced
  • Chipotle peppers in adobo sauce - 2 peppers, chopped
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Bay leaves - 2
  • Beef broth - 250 milliliters
  • Lime juice - 30 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 15 grams, chopped (for garnish)
  • Tortillas - 4 small (corn or flour)

Steps

  1. In a large skillet, sear the beef chuck roast over medium-high heat for about 5 minutes on each side until browned.
  2. In a slow cooker, combine the diced onion, minced garlic, chopped chipotle peppers, cumin, oregano, bay leaves, beef broth, lime juice, salt, and black pepper.
  3. Add the seared beef to the slow cooker, making sure it is submerged in the liquid.
  4. Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender and easily shredded.
  5. Once cooked, remove the beef from the slow cooker and shred it using two forks.
  6. Return the shredded beef to the slow cooker and mix it with the remaining juices.
  7. Serve the Barbacoa de Res with warm tortillas and garnish with chopped cilantro.
