- Beef chuck roast - 500 grams
- Onion - 1 medium, diced
- Garlic - 4 cloves, minced
- Chipotle peppers in adobo sauce - 2 peppers, chopped
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Bay leaves - 2
- Beef broth - 250 milliliters
- Lime juice - 30 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 15 grams, chopped (for garnish)
- Tortillas - 4 small (corn or flour)
Steps
- In a large skillet, sear the beef chuck roast over medium-high heat for about 5 minutes on each side until browned.
- In a slow cooker, combine the diced onion, minced garlic, chopped chipotle peppers, cumin, oregano, bay leaves, beef broth, lime juice, salt, and black pepper.
- Add the seared beef to the slow cooker, making sure it is submerged in the liquid.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender and easily shredded.
- Once cooked, remove the beef from the slow cooker and shred it using two forks.
- Return the shredded beef to the slow cooker and mix it with the remaining juices.
- Serve the Barbacoa de Res with warm tortillas and garnish with chopped cilantro.
