Ingredients

  • Zucchini - 100 grams
  • Red bell pepper - 100 grams
  • Cherry tomatoes - 100 grams
  • Vegan chorizo - 100 grams
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 2
  • Fresh cilantro - 10 grams
  • Lime - 1

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. Wash and cut the zucchini and red bell pepper into bite-sized pieces.
  3. In a bowl, combine the zucchini, red bell pepper, cherry tomatoes, and vegan chorizo. Drizzle with olive oil and season with smoked paprika, cumin, salt, and black pepper. Toss to coat evenly.
  4. Thread the marinated vegetables and chorizo onto skewers, alternating as desired.
  5. Grill the skewers for about 10 minutes, turning occasionally until the vegetables are tender and slightly charred.
  6. Meanwhile, warm the corn tortillas on a separate pan or griddle for about 1-2 minutes on each side.
  7. Once the skewers are done, remove them from the grill and let them cool slightly.
  8. Serve the banderillas on the warm tortillas, garnish with fresh cilantro, and squeeze lime juice over the top.
