- Zucchini - 100 grams
- Red bell pepper - 100 grams
- Cherry tomatoes - 100 grams
- Vegan chorizo - 100 grams
- Olive oil - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 2
- Fresh cilantro - 10 grams

Steps
- Preheat your grill or grill pan over medium heat.
- Wash and cut the zucchini and red bell pepper into bite-sized pieces.
- In a bowl, combine the zucchini, red bell pepper, cherry tomatoes, and vegan chorizo. Drizzle with olive oil and season with smoked paprika, cumin, salt, and black pepper. Toss to coat evenly.
- Thread the marinated vegetables and chorizo onto skewers, alternating as desired.
- Grill the skewers for about 10 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Meanwhile, warm the corn tortillas on a separate pan or griddle for about 1-2 minutes on each side.
- Once the skewers are done, remove them from the grill and let them cool slightly.
- Serve the banderillas on the warm tortillas, garnish with fresh cilantro, and squeeze lime juice over the top.
