Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/2 cup
  • Salt - 1/2 teaspoon
  • Canned black beans - 1 cup
  • Cumin - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Avocado - 1 medium
  • Salsa (your choice) - 1/2 cup
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine whole wheat flour, salt, and water. Knead the dough until smooth, then cover and let it rest for 15 minutes.
  2. While the dough is resting, heat olive oil in a pan over medium heat. Add canned black beans and cumin, mashing the beans slightly as they cook. Heat for about 5-7 minutes until warmed through.
  3. Divide the dough into 2 equal portions and roll each portion into a ball. On a floured surface, roll out each ball into a thin tortilla (about 8 inches in diameter).
  4. Heat a skillet over medium-high heat and cook each tortilla for about 1-2 minutes on each side, until lightly browned and cooked through.
  5. Spread a generous amount of the refried black beans onto each tortilla, then top with sliced avocado, salsa, and chopped cilantro.
  6. Fold each tortilla in half and serve warm.
