Baleadas Hondureñas are deliciously simple tortillas filled with beans, cheese, and avocado, making them a satisfying and nutritious meal. This Paleo adaptation uses almond flour tortillas for a grain-free twist.

Ingredients

  • Almond flour - 1 cup
  • Egg - 1 large
  • Water - 3 tablespoons
  • Salt - 1/4 teaspoon
  • Black beans - 1 cup, cooked and mashed
  • Avocado - 1 medium, sliced
  • Cotija cheese - 1/2 cup, crumbled
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon

Steps

  1. In a mixing bowl, combine almond flour, egg, water, and salt to form a dough.
  2. Divide the dough into two equal portions and roll each into a ball.
  3. Flatten each ball into a round tortilla shape about 1/4 inch thick.
  4. Heat a non-stick skillet over medium heat and cook each tortilla for 2-3 minutes on each side until lightly golden.
  5. In a separate bowl, mix the mashed black beans with lime juice and cilantro.
  6. Assemble the baleadas by spreading the bean mixture on the tortilla, adding sliced avocado and crumbled cheese on top.
  7. Fold the tortilla in half and serve immediately.
