Baleadas Hondureñas
Baleadas Hondureñas are deliciously simple tortillas filled with beans, cheese, and avocado, making them a satisfying and nutritious meal. This Paleo adaptation uses almond flour tortillas for a grain-free twist.

- Almond flour - 1 cup
- Egg - 1 large
- Water - 3 tablespoons
- Salt - 1/4 teaspoon
- Black beans - 1 cup, cooked and mashed
- Avocado - 1 medium, sliced
- Cotija cheese - 1/2 cup, crumbled
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
Steps
- In a mixing bowl, combine almond flour, egg, water, and salt to form a dough.
- Divide the dough into two equal portions and roll each into a ball.
- Flatten each ball into a round tortilla shape about 1/4 inch thick.
- Heat a non-stick skillet over medium heat and cook each tortilla for 2-3 minutes on each side until lightly golden.
- In a separate bowl, mix the mashed black beans with lime juice and cilantro.
- Assemble the baleadas by spreading the bean mixture on the tortilla, adding sliced avocado and crumbled cheese on top.
- Fold the tortilla in half and serve immediately.
