- Eggs - 4 large
- Refried black beans - 1/2 cup
- Shredded cheese (cheddar or queso fresco) - 1/4 cup
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped cilantro - 2 tablespoons
- Avocado - 1/2 medium (for serving)
Steps
- In a mixing bowl, combine almond flour and salt, then gradually add water until a dough forms. Knead for a few minutes until smooth.
- Divide the dough into 2 equal portions and roll each into a ball. Flatten each ball into a disc about 1/4 inch thick.
- Heat a non-stick skillet over medium heat and cook the discs for about 2-3 minutes on each side until lightly browned. Remove and set aside.
- In the same skillet, add olive oil and scramble the eggs with black pepper. Cook until just set but still soft.
