Ingredients

  • Eggs - 4 large
  • Refried black beans - 1/2 cup
  • Shredded cheese (cheddar or queso fresco) - 1/4 cup
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped cilantro - 2 tablespoons
  • Avocado - 1/2 medium (for serving)

Steps

  1. In a mixing bowl, combine almond flour and salt, then gradually add water until a dough forms. Knead for a few minutes until smooth.
  2. Divide the dough into 2 equal portions and roll each into a ball. Flatten each ball into a disc about 1/4 inch thick.
  3. Heat a non-stick skillet over medium heat and cook the discs for about 2-3 minutes on each side until lightly browned. Remove and set aside.
