- Black beans (cooked) - 1/2 cup
- Avocado - 1 medium, sliced
- Cotija cheese - 1/4 cup, crumbled
- Cilantro - 2 tablespoons, chopped (optional)
- Lime - 1, cut into wedges (optional)
Steps
- In a mixing bowl, combine the almond flour, egg, water, and salt to form a dough. Knead until smooth and let it rest for 10 minutes.
- Divide the dough into 2 equal pieces and roll each piece into a ball. Flatten each ball into a disc about 1/4 inch thick.
- Heat a non-stick skillet over medium heat and cook each tortilla for about 2-3 minutes on each side until lightly golden and cooked through. Keep warm in a clean kitchen towel.
- In the same skillet, gently heat the cooked black beans until warm. Mash them slightly with a fork for a creamy texture.
