Ingredients

  • Almond flour - 1 cup
  • Egg - 1 large
  • Water - 1/4 cup
  • Salt - 1/2 teaspoon
  • Black beans (cooked) - 1/2 cup
  • Avocado - 1 medium, sliced
  • Cotija cheese - 1/4 cup, crumbled
  • Cilantro - 2 tablespoons, chopped (optional)
  • Lime - 1, cut into wedges (optional)

Steps

  1. In a mixing bowl, combine the almond flour, egg, water, and salt to form a dough. Knead until smooth and let it rest for 10 minutes.
  2. Divide the dough into 2 equal pieces and roll each piece into a ball. Flatten each ball into a disc about 1/4 inch thick.
  3. Heat a non-stick skillet over medium heat and cook each tortilla for about 2-3 minutes on each side until lightly golden and cooked through. Keep warm in a clean kitchen towel.
  4. In the same skillet, gently heat the cooked black beans until warm. Mash them slightly with a fork for a creamy texture.
  5. To assemble, place a generous spoonful of the mashed black beans on each tortilla, then top with sliced avocado and crumbled Cotija cheese.
  6. Garnish with chopped cilantro if desired and serve with lime wedges on the side.
