Baleadas are a delicious traditional Mexican breakfast dish featuring soft flour tortillas filled with refried beans, eggs, and cheese. This high-protein version is perfect for a hearty start to your day.

- All-purpose flour - 200 grams
- Water - 120 milliliters
- Salt - 1 teaspoon
- Olive oil - 1 tablespoon
- Refried black beans - 200 grams
- Eggs - 4 large
- Queso fresco - 100 grams, crumbled
- Avocado - 1 medium, sliced
- Hot sauce - to taste
Steps
- In a bowl, mix the flour, salt, and olive oil. Gradually add water while kneading until a smooth dough forms. Cover and let it rest for 10 minutes.
- Divide the dough into 4 equal balls. Roll each ball into a thin tortilla (about 20 cm in diameter).
- Heat a skillet over medium heat and cook each tortilla for about 1-2 minutes per side until lightly browned. Keep warm.
- In another skillet, heat the refried black beans until warm. In the same skillet, scramble the eggs until fully cooked.
- To assemble, spread a generous portion of refried beans on one half of a tortilla, top with scrambled eggs, crumbled queso fresco, and sliced avocado.
- Fold the tortilla over and serve with hot sauce on the side.
