Ingredients

  • All-purpose flour - 200 grams
  • Water - 120 milliliters
  • Salt - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Refried black beans - 200 grams
  • Eggs - 4 large
  • Queso fresco - 100 grams, crumbled
  • Avocado - 1 medium, sliced
  • Hot sauce - to taste

Steps

  1. In a bowl, mix the flour, salt, and olive oil. Gradually add water while kneading until a smooth dough forms. Cover and let it rest for 10 minutes.
  2. Divide the dough into 4 equal balls. Roll each ball into a thin tortilla (about 20 cm in diameter).
  3. Heat a skillet over medium heat and cook each tortilla for about 1-2 minutes per side until lightly browned. Keep warm.
  4. In another skillet, heat the refried black beans until warm. In the same skillet, scramble the eggs until fully cooked.
  5. To assemble, spread a generous portion of refried beans on one half of a tortilla, top with scrambled eggs, crumbled queso fresco, and sliced avocado.
  6. Fold the tortilla over and serve with hot sauce on the side.
