Ingredients

  • Corn tortillas - 2 large
  • Black beans, canned - 1 cup, drained and rinsed
  • Cooked chicken breast, shredded - 150 grams
  • Oaxaca cheese, shredded - 100 grams
  • Tomato, diced - 1 medium
  • Red onion, diced - 1/2 medium
  • Avocado, sliced - 1 small
  • Fresh cilantro, chopped - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine the black beans, shredded chicken, diced tomato, red onion, olive oil, lime juice, ground cumin, salt, and black pepper. Mix well.
  3. Place the corn tortillas on a baking sheet lined with parchment paper.
  4. Spread the bean and chicken mixture evenly over each tortilla.
  5. Top each tortilla with shredded Oaxaca cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool for a minute.
  8. Garnish with sliced avocado and chopped cilantro before serving.
