- Corn tortillas - 2 large
- Black beans, canned - 1 cup, drained and rinsed
- Cooked chicken breast, shredded - 150 grams
- Oaxaca cheese, shredded - 100 grams
- Tomato, diced - 1 medium
- Red onion, diced - 1/2 medium
- Avocado, sliced - 1 small
- Fresh cilantro, chopped - 2 tablespoons
- Olive oil - 1 tablespoon
- Lime juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Preheat your oven to 200°C (400°F).
- In a mixing bowl, combine the black beans, shredded chicken, diced tomato, red onion, olive oil, lime juice, ground cumin, salt, and black pepper. Mix well.
- Place the corn tortillas on a baking sheet lined with parchment paper.
- Spread the bean and chicken mixture evenly over each tortilla.
- Top each tortilla with shredded Oaxaca cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
