Ingredients
- Whole wheat tortillas - 4 pieces
- Cooked shredded chicken breast - 200 grams
- Black beans - 100 grams, rinsed and drained
- Low-fat cream cheese - 50 grams, softened
- Shredded low-fat cheese (cheddar or Mexican blend) - 50 grams
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Salsa - for serving
Steps
- Preheat your oven to 200°C (400°F).
- In a large mixing bowl, combine the shredded chicken, black beans, cream cheese, shredded cheese, cumin, chili powder, garlic powder, salt, and chopped cilantro. Mix until well combined.
- Lay out the whole wheat tortillas on a clean surface. Spoon about 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla.
- Roll the tortillas tightly around the filling, starting from the bottom and tucking in the sides as you go to create a sealed taquito.
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
- Brush the tops of the taquitos with olive oil for added crispiness.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
- Remove from the oven and let them cool slightly before serving with salsa.
