Ingredients

  • Whole wheat tortillas - 4 pieces
  • Cooked shredded chicken breast - 200 grams
  • Black beans - 100 grams, rinsed and drained
  • Low-fat cream cheese - 50 grams, softened
  • Shredded low-fat cheese (cheddar or Mexican blend) - 50 grams
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salsa - for serving

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large mixing bowl, combine the shredded chicken, black beans, cream cheese, shredded cheese, cumin, chili powder, garlic powder, salt, and chopped cilantro. Mix until well combined.
  3. Lay out the whole wheat tortillas on a clean surface. Spoon about 2-3 tablespoons of the chicken mixture onto the lower third of each tortilla.
  4. Roll the tortillas tightly around the filling, starting from the bottom and tucking in the sides as you go to create a sealed taquito.
  5. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Brush the tops of the taquitos with olive oil for added crispiness.
  7. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy.
  8. Remove from the oven and let them cool slightly before serving with salsa.
