Ingredients

  • Whole wheat tortillas - 4 small (or 2 large)
  • Lean ground turkey - 250 grams
  • Black beans - 100 grams, drained and rinsed
  • Red bell pepper - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Low-fat shredded cheese - 50 grams
  • Sour cream or Greek yogurt - 2 tablespoons (for serving)
  • Lime wedges - 2 (for serving)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet over medium heat, add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground turkey to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
  4. Stir in the black beans, diced red bell pepper, cumin, paprika, chili powder, salt, and black pepper. Cook for another 3-4 minutes until the peppers are tender.
  5. Remove the skillet from heat and stir in the chopped cilantro.
  6. Place the whole wheat tortillas in a baking dish, slightly overlapping each one.
  7. Spoon the turkey and bean mixture evenly into the tortillas, then sprinkle the shredded cheese on top.
  8. Bake in the preheated oven for 10-12 minutes until the cheese is melted and the tortillas are crispy.
  9. Remove from the oven and let cool for a few minutes before serving.
  10. Serve with a dollop of sour cream or Greek yogurt and lime wedges on the side.
