- Whole wheat tortillas - 4 small (or 2 large)
- Lean ground turkey - 250 grams
- Black beans - 100 grams, drained and rinsed
- Red bell pepper - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Low-fat shredded cheese - 50 grams
- Sour cream or Greek yogurt - 2 tablespoons (for serving)
- Lime wedges - 2 (for serving)
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet over medium heat, add the onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
- Stir in the black beans, diced red bell pepper, cumin, paprika, chili powder, salt, and black pepper. Cook for another 3-4 minutes until the peppers are tender.
- Remove the skillet from heat and stir in the chopped cilantro.
- Place the whole wheat tortillas in a baking dish, slightly overlapping each one.
- Spoon the turkey and bean mixture evenly into the tortillas, then sprinkle the shredded cheese on top.
- Bake in the preheated oven for 10-12 minutes until the cheese is melted and the tortillas are crispy.
- Remove from the oven and let cool for a few minutes before serving.
- Serve with a dollop of sour cream or Greek yogurt and lime wedges on the side.
