Ingredients

  • Ripe avocados - 2
  • Black beans - 1 cup, rinsed and drained
  • Corn kernels - 1/2 cup (fresh or frozen)
  • Cherry tomatoes - 1/2 cup, halved
  • Red onion - 1/4 cup, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Ground cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Pepper - 1/4 teaspoon
  • Shredded cheese (cheddar or mozzarella) - 1/2 cup
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the avocados in half and remove the pits. Scoop out a small amount of flesh to create a larger cavity for stuffing, and chop the removed flesh.
  3. In a mixing bowl, combine black beans, corn, cherry tomatoes, red onion, chopped avocado flesh, cilantro, lime juice, ground cumin, chili powder, salt, and pepper. Mix well.
  4. Place the avocado halves in a baking dish, cut side up. Drizzle with olive oil.
  5. Stuff each avocado half generously with the bean and corn mixture.
  6. Sprinkle shredded cheese on top of each stuffed avocado.
  7. Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
