- Ripe avocados - 2
- Black beans - 1 cup, rinsed and drained
- Corn kernels - 1/2 cup (fresh or frozen)
- Cherry tomatoes - 1/2 cup, halved
- Red onion - 1/4 cup, finely chopped
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Ground cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Pepper - 1/4 teaspoon
- Shredded cheese (cheddar or mozzarella) - 1/2 cup
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 190°C (375°F).
- Cut the avocados in half and remove the pits. Scoop out a small amount of flesh to create a larger cavity for stuffing, and chop the removed flesh.
- In a mixing bowl, combine black beans, corn, cherry tomatoes, red onion, chopped avocado flesh, cilantro, lime juice, ground cumin, chili powder, salt, and pepper. Mix well.
- Place the avocado halves in a baking dish, cut side up. Drizzle with olive oil.
- Stuff each avocado half generously with the bean and corn mixture.
- Sprinkle shredded cheese on top of each stuffed avocado.
- Bake in the preheated oven for about 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
