Ingredients
- Sopes (thick corn tortillas) - 4 pieces
- Ground turkey or chicken - 200 grams
- Black beans, cooked and drained - 1 cup
- Shredded low-fat cheese (cheddar or mozzarella) - 100 grams
- Salsa (mild or hot) - 1/2 cup
- Corn kernels (fresh or frozen) - 1/2 cup
- Chopped onion - 1/4 cup
- Chopped fresh cilantro - 2 tablespoons
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3 minutes.
- Add the ground turkey or chicken to the skillet, season with cumin, salt, and pepper, and cook until browned and cooked through, about 5-7 minutes.
- Stir in the cooked black beans and corn, and mix well. Remove from heat.
- On a baking sheet, place the sopes and spoon the turkey mixture evenly onto each one.
- Top each sope with salsa and shredded cheese.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from oven, garnish with chopped cilantro, and serve hot.
