Ingredients

  • Sopes (thick corn tortillas) - 4 pieces
  • Ground turkey or chicken - 200 grams
  • Black beans, cooked and drained - 1 cup
  • Shredded low-fat cheese (cheddar or mozzarella) - 100 grams
  • Salsa (mild or hot) - 1/2 cup
  • Corn kernels (fresh or frozen) - 1/2 cup
  • Chopped onion - 1/4 cup
  • Chopped fresh cilantro - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3 minutes.
  3. Add the ground turkey or chicken to the skillet, season with cumin, salt, and pepper, and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the cooked black beans and corn, and mix well. Remove from heat.
  5. On a baking sheet, place the sopes and spoon the turkey mixture evenly onto each one.
  6. Top each sope with salsa and shredded cheese.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  8. Remove from oven, garnish with chopped cilantro, and serve hot.
