Ingredients
- 2 large poblano peppers
- 200 grams cooked chicken breast, shredded
- 100 grams low-fat cream cheese, softened
- 50 grams shredded mozzarella cheese
- 50 grams black beans, rinsed and drained
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Steps
- Preheat the oven to 200°C (400°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally, until the skins are blistered and charred.
- Remove the peppers from the oven and place them in a covered bowl for 10 minutes to steam, which will make peeling easier.
- While the peppers are steaming, heat olive oil in a skillet over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent, about 5 minutes.
- In a large bowl, combine the shredded chicken, softened cream cheese, mozzarella cheese, black beans, sautéed onion and garlic, cumin, smoked paprika, salt, and pepper. Mix until well combined.
- Once the peppers are cool enough to handle, peel off the skins and make a slit down one side of each pepper to remove the seeds.
- Stuff each pepper with the chicken and cheese mixture, pressing gently to fill them completely.
- Place the stuffed peppers back on the baking sheet and bake for an additional 15 minutes, or until heated through and the cheese is melted.
- Garnish with fresh cilantro before serving.
