Ingredients

  • 2 large poblano peppers
  • 200 grams cooked chicken breast, shredded
  • 100 grams low-fat cream cheese, softened
  • 50 grams shredded mozzarella cheese
  • 50 grams black beans, rinsed and drained
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally, until the skins are blistered and charred.
  3. Remove the peppers from the oven and place them in a covered bowl for 10 minutes to steam, which will make peeling easier.
  4. While the peppers are steaming, heat olive oil in a skillet over medium heat. Add the diced onion and garlic, and sauté until the onion is translucent, about 5 minutes.
  5. In a large bowl, combine the shredded chicken, softened cream cheese, mozzarella cheese, black beans, sautéed onion and garlic, cumin, smoked paprika, salt, and pepper. Mix until well combined.
  6. Once the peppers are cool enough to handle, peel off the skins and make a slit down one side of each pepper to remove the seeds.
  7. Stuff each pepper with the chicken and cheese mixture, pressing gently to fill them completely.
  8. Place the stuffed peppers back on the baking sheet and bake for an additional 15 minutes, or until heated through and the cheese is melted.
  9. Garnish with fresh cilantro before serving.
