- Black beans - 1 cup, cooked and drained
- Corn kernels - 1/2 cup, fresh or frozen
- Diced tomatoes - 1 cup, canned (drained)
- Red onion - 1/2 medium, diced
- Bell pepper - 1/2 medium, diced (any color)
- Zucchini - 1 small, diced
- Shredded Monterey Jack cheese - 1 cup
- Shredded cheddar cheese - 1/2 cup
- Olive oil - 1 tablespoon
- Taco seasoning - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat. Add the diced red onion and bell pepper, sautéing until soft, about 4-5 minutes.
- Add the diced zucchini, corn, black beans, diced tomatoes, taco seasoning, salt, and pepper. Cook for another 5 minutes until everything is heated through.
- In a baking dish, spread a thin layer of the bean mixture on the bottom. Place 2 tortillas on top, followed by half of the remaining mixture, and a sprinkle of Monterey Jack cheese.
- Repeat the layering process: 2 tortillas, the rest of the mixture, and top with the remaining Monterey Jack cheese and cheddar cheese.
- Cover the dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before garnishing with chopped cilantro and serving.
