Ingredients

  • Corn tortillas - 6 pieces
  • Black beans - 1 cup, cooked and drained
  • Corn kernels - 1/2 cup, fresh or frozen
  • Diced tomatoes - 1 cup, canned (drained)
  • Red onion - 1/2 medium, diced
  • Bell pepper - 1/2 medium, diced (any color)
  • Zucchini - 1 small, diced
  • Shredded Monterey Jack cheese - 1 cup
  • Shredded cheddar cheese - 1/2 cup
  • Olive oil - 1 tablespoon
  • Taco seasoning - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat. Add the diced red onion and bell pepper, sautéing until soft, about 4-5 minutes.
  3. Add the diced zucchini, corn, black beans, diced tomatoes, taco seasoning, salt, and pepper. Cook for another 5 minutes until everything is heated through.
  4. In a baking dish, spread a thin layer of the bean mixture on the bottom. Place 2 tortillas on top, followed by half of the remaining mixture, and a sprinkle of Monterey Jack cheese.
  5. Repeat the layering process: 2 tortillas, the rest of the mixture, and top with the remaining Monterey Jack cheese and cheddar cheese.
  6. Cover the dish with foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before garnishing with chopped cilantro and serving.
