  • Chili powder - 1 teaspoon
  • Eggs - 4 large
  • Corn tortillas - 2, cut into quarters
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1 medium, sliced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet over medium heat, add olive oil and sauté the onion, garlic, and red bell pepper until softened, about 5 minutes.
  3. Stir in the cumin, chili powder, salt, and black pepper, cooking for another minute until fragrant.
  4. Add the canned black beans and diced tomatoes, simmer for 5-7 minutes to heat through and combine the flavors.
  5. In a baking dish, arrange the corn tortilla pieces on the bottom, then pour the black bean and tomato mixture over them.
  6. Make four small wells in the mixture and crack an egg into each well.
  7. Transfer the baking dish to the preheated oven and bake for 15-20 minutes, or until the egg whites are set but the yolks remain runny.
  8. Remove from the oven and garnish with avocado slices, crumbled feta cheese, and chopped cilantro before serving.
