- Eggs - 4 large
- Corn tortillas - 2, cut into quarters
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1 medium, sliced
- Feta cheese - 50 grams, crumbled
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 190°C (375°F).
- In a skillet over medium heat, add olive oil and sauté the onion, garlic, and red bell pepper until softened, about 5 minutes.
- Stir in the cumin, chili powder, salt, and black pepper, cooking for another minute until fragrant.
- Add the canned black beans and diced tomatoes, simmer for 5-7 minutes to heat through and combine the flavors.
- In a baking dish, arrange the corn tortilla pieces on the bottom, then pour the black bean and tomato mixture over them.
- Make four small wells in the mixture and crack an egg into each well.
- Transfer the baking dish to the preheated oven and bake for 15-20 minutes, or until the egg whites are set but the yolks remain runny.
- Remove from the oven and garnish with avocado slices, crumbled feta cheese, and chopped cilantro before serving.
