- Black beans - 200 grams, soaked overnight
- Vegetable broth - 250 ml
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Tomato - 1 medium, diced
- Green bell pepper - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime - 1, juiced
- Avocado - 1 small, sliced for topping
- Cotija cheese - 30 grams, crumbled (optional)
Steps
- Preheat your oven to 180°C (350°F).
- In a pot, heat olive oil over medium heat, then add diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic, diced tomato, and green bell pepper to the pot, cooking for another 5 minutes until the vegetables soften.
- Stir in the soaked black beans, vegetable broth, cumin, smoked paprika, salt, and black pepper. Bring to a simmer and let cook for 10 minutes.
- Transfer the mixture to a baking dish, cover with aluminum foil, and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil, and bake for an additional 10 minutes to slightly crisp the top.
- Remove from the oven and stir in lime juice and chopped cilantro.
- Serve hot, topped with avocado slices and crumbled Cotija cheese if desired.
