- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Vegan cheese (optional) - 50 grams
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat and sauté the chopped onion for 3-4 minutes until translucent.
- Add minced garlic and diced bell pepper, sautéing for an additional 2-3 minutes.
- Stir in the canned diced tomatoes, vegetable broth, cumin, chili powder, salt, and black pepper. Bring the mixture to a simmer.
- Add the fideo noodles to the skillet, stirring to combine, and cook for 5 minutes until the noodles start to soften.
- Remove from heat and stir in the chopped cilantro and lime juice.
- Transfer the mixture to a baking dish and sprinkle vegan cheese on top if desired.
- Bake in the preheated oven for 15 minutes or until the noodles are fully cooked and the top is slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
