  • Diced tomatoes - 400 grams (canned)
  • Vegetable broth - 250 ml
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Vegan cheese (optional) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the chopped onion for 3-4 minutes until translucent.
  3. Add minced garlic and diced bell pepper, sautéing for an additional 2-3 minutes.
  4. Stir in the canned diced tomatoes, vegetable broth, cumin, chili powder, salt, and black pepper. Bring the mixture to a simmer.
  5. Add the fideo noodles to the skillet, stirring to combine, and cook for 5 minutes until the noodles start to soften.
  6. Remove from heat and stir in the chopped cilantro and lime juice.
  7. Transfer the mixture to a baking dish and sprinkle vegan cheese on top if desired.
  8. Bake in the preheated oven for 15 minutes or until the noodles are fully cooked and the top is slightly golden.
  9. Remove from the oven and let it cool for a few minutes before serving.
