Ingredients

  • Chicken breast - 300 grams
  • Red bell pepper - 1 medium
  • Green bell pepper - 1 medium
  • Yellow bell pepper - 1 medium
  • Onion - 1 medium
  • Olive oil - 2 tablespoons
  • Fajita seasoning - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime juice - 2 tablespoons
  • Fresh cilantro - for garnish
  • Tortillas (whole wheat or corn) - 4 small

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the chicken breast into thin strips and place in a large bowl.
  3. Chop the red, green, and yellow bell peppers, and onion into thin strips.
  4. Add the sliced vegetables to the bowl with the chicken.
  5. Drizzle the olive oil and lime juice over the chicken and vegetables.
  6. Sprinkle the fajita seasoning, garlic powder, salt, and black pepper over the mixture, then toss everything together until well coated.
  7. Spread the chicken and vegetable mixture evenly on a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
  9. Remove from the oven and garnish with fresh cilantro.
  10. Serve warm with tortillas on the side.
