Ingredients
- Chicken breast - 300 grams
- Red bell pepper - 1 medium
- Green bell pepper - 1 medium
- Yellow bell pepper - 1 medium
- Onion - 1 medium
- Olive oil - 2 tablespoons
- Fajita seasoning - 2 tablespoons
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Lime juice - 2 tablespoons
- Fresh cilantro - for garnish
- Tortillas (whole wheat or corn) - 4 small
Steps
- Preheat the oven to 200°C (400°F).
- Slice the chicken breast into thin strips and place in a large bowl.
- Chop the red, green, and yellow bell peppers, and onion into thin strips.
- Add the sliced vegetables to the bowl with the chicken.
- Drizzle the olive oil and lime juice over the chicken and vegetables.
- Sprinkle the fajita seasoning, garlic powder, salt, and black pepper over the mixture, then toss everything together until well coated.
- Spread the chicken and vegetable mixture evenly on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender, stirring halfway through.
- Remove from the oven and garnish with fresh cilantro.
- Serve warm with tortillas on the side.
