Ingredients

  • Corn tortillas - 4
  • Fresh spinach - 200 grams
  • Ricotta cheese - 100 grams
  • Shredded mozzarella cheese - 100 grams
  • Enchilada sauce - 200 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cumin to the skillet, cooking for another minute until fragrant.
  4. Stir in the fresh spinach and cook until wilted, around 2-3 minutes. Remove from heat and let cool slightly.
  5. In a bowl, combine the sautéed spinach mixture with ricotta cheese, salt, and black pepper. Mix well until combined.
  6. Take a corn tortilla, spoon some of the spinach filling into the center, and roll it up tightly. Place the rolled tortilla seam-side down in a baking dish. Repeat with remaining tortillas.
  7. Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded mozzarella cheese on top.
  8. Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and slightly golden.
  9. Remove from the oven, garnish with chopped cilantro, and serve hot.
