Ingredients

  • fresh sweet corn - 2 ears
  • mayonnaise - 2 tablespoons
  • sour cream - 2 tablespoons
  • cotija cheese - 50 grams, crumbled
  • lime juice - 1 tablespoon
  • garlic powder - 1 teaspoon
  • chili powder - 1/2 teaspoon
  • cumin - 1/4 teaspoon
  • salt - to taste
  • black pepper - to taste
  • fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Carefully remove the kernels from the sweet corn using a sharp knife.
  3. In a mixing bowl, combine the corn kernels, mayonnaise, sour cream, cotija cheese, lime juice, garlic powder, chili powder, cumin, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
