Ingredients
- Medium eggplant - 1
- Ground beef (or turkey) - 250 grams
- Olive oil - 2 tablespoons
- Garlic cloves, minced - 2
- Onion, diced - 1/2
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Shredded cheese (cheddar or Mexican blend) - 100 grams
- Sour cream - 4 tablespoons
- Fresh cilantro, chopped - 2 tablespoons
- Lime, cut into wedges - 1
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant in half lengthwise and scoop out some of the flesh to create a boat, leaving about 1 cm of the edge. Brush the cut sides with 1 tablespoon of olive oil and sprinkle with salt. Place the eggplant halves on a baking sheet, cut side up.
- In a skillet over medium heat, add the remaining tablespoon of olive oil. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground beef (or turkey) to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the chili powder, cumin, paprika, salt, and black pepper. Mix well and cook for another 2-3 minutes until the spices are fragrant.
- Remove the skillet from heat and stir in half of the shredded cheese.
- Spoon the meat mixture into the prepared eggplant halves, packing it in tightly.
- Sprinkle the remaining shredded cheese on top of the filled eggplants.
- Bake in the preheated oven for 25-30 minutes, or until the eggplant is tender and the cheese is melted and bubbly.
- Once baked, remove from the oven and let it cool slightly. Top with sour cream, chopped cilantro, and serve with lime wedges.
