Ingredients

  • Medium eggplant - 1
  • Ground beef (or turkey) - 250 grams
  • Olive oil - 2 tablespoons
  • Garlic cloves, minced - 2
  • Onion, diced - 1/2
  • Chili powder - 1 teaspoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Shredded cheese (cheddar or Mexican blend) - 100 grams
  • Sour cream - 4 tablespoons
  • Fresh cilantro, chopped - 2 tablespoons
  • Lime, cut into wedges - 1

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Slice the eggplant in half lengthwise and scoop out some of the flesh to create a boat, leaving about 1 cm of the edge. Brush the cut sides with 1 tablespoon of olive oil and sprinkle with salt. Place the eggplant halves on a baking sheet, cut side up.
  3. In a skillet over medium heat, add the remaining tablespoon of olive oil. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  4. Add the ground beef (or turkey) to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the chili powder, cumin, paprika, salt, and black pepper. Mix well and cook for another 2-3 minutes until the spices are fragrant.
  6. Remove the skillet from heat and stir in half of the shredded cheese.
  7. Spoon the meat mixture into the prepared eggplant halves, packing it in tightly.
  8. Sprinkle the remaining shredded cheese on top of the filled eggplants.
  9. Bake in the preheated oven for 25-30 minutes, or until the eggplant is tender and the cheese is melted and bubbly.
  10. Once baked, remove from the oven and let it cool slightly. Top with sour cream, chopped cilantro, and serve with lime wedges.
