Ingredients
- Poblano peppers - 2 large
- Ground beef (Halal) - 200 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Cheddar cheese - 100 grams, shredded
- Monterey Jack cheese - 100 grams, shredded
- Egg - 1 large
- Olive oil - 1 tablespoon
- Tomato sauce - 100 grams
Steps
- Preheat your oven to 180°C (350°F).
- Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven and place in a bowl covered with plastic wrap for 10 minutes to steam.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).
- Add the ground beef, cumin, paprika, salt, and black pepper to the skillet. Cook until the beef is browned and cooked through (about 5-7 minutes). Stir in the chopped cilantro and remove from heat.
- Once the peppers are cool enough to handle, carefully peel off the charred skin. Cut a slit down the side of each pepper and remove the seeds, being careful not to tear the peppers.
- In a bowl, mix the cooked beef with half of the cheddar and Monterey Jack cheeses. Stuff each pepper generously with the beef and cheese mixture.
- Place the stuffed peppers in a baking dish. Pour the tomato sauce over the peppers and sprinkle the remaining cheese on top.
- In a small bowl, whisk the egg and brush it over the top of the cheese on the peppers.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Serve hot, garnished with additional cilantro if desired.
