Ingredients

  • Poblano peppers - 2 large
  • Ground beef (Halal) - 200 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Cheddar cheese - 100 grams, shredded
  • Monterey Jack cheese - 100 grams, shredded
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Tomato sauce - 100 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Roast the poblano peppers on a baking sheet for about 20 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven and place in a bowl covered with plastic wrap for 10 minutes to steam.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent (about 3-4 minutes).
  4. Add the ground beef, cumin, paprika, salt, and black pepper to the skillet. Cook until the beef is browned and cooked through (about 5-7 minutes). Stir in the chopped cilantro and remove from heat.
  5. Once the peppers are cool enough to handle, carefully peel off the charred skin. Cut a slit down the side of each pepper and remove the seeds, being careful not to tear the peppers.
  6. In a bowl, mix the cooked beef with half of the cheddar and Monterey Jack cheeses. Stuff each pepper generously with the beef and cheese mixture.
  7. Place the stuffed peppers in a baking dish. Pour the tomato sauce over the peppers and sprinkle the remaining cheese on top.
  8. In a small bowl, whisk the egg and brush it over the top of the cheese on the peppers.
  9. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  10. Serve hot, garnished with additional cilantro if desired.
