Ingredients

  • Poblano peppers - 2
  • Ground beef (halal) - 150 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Tomato sauce - 200 grams
  • Olive oil - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Cheese (Mexican blend) - 50 grams, shredded

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Roast the poblano peppers on a baking sheet for about 15 minutes, turning occasionally until the skins are blistered and charred. Remove from oven and cover with a kitchen towel to steam for 5 minutes.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Then stir in cumin, paprika, salt, and black pepper.
  5. Remove from heat and mix in the chopped cilantro and lime juice. Set aside to cool slightly.
  6. Once the peppers are cool enough to handle, peel off the charred skin and make a slit down the side of each pepper. Carefully remove the seeds.
  7. Stuff each poblano pepper with the beef mixture and place them in a baking dish.
  8. Pour the tomato sauce over the stuffed peppers and sprinkle the shredded cheese on top.
  9. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  10. Serve warm, garnished with additional cilantro if desired.
