- Poblano peppers - 2
- Ground beef (halal) - 150 grams
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Tomato sauce - 200 grams
- Olive oil - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Cheese (Mexican blend) - 50 grams, shredded
Steps
- Preheat your oven to 200°C (400°F).
- Roast the poblano peppers on a baking sheet for about 15 minutes, turning occasionally until the skins are blistered and charred. Remove from oven and cover with a kitchen towel to steam for 5 minutes.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes. Then stir in cumin, paprika, salt, and black pepper.
- Remove from heat and mix in the chopped cilantro and lime juice. Set aside to cool slightly.
- Once the peppers are cool enough to handle, peel off the charred skin and make a slit down the side of each pepper. Carefully remove the seeds.
- Stuff each poblano pepper with the beef mixture and place them in a baking dish.
- Pour the tomato sauce over the stuffed peppers and sprinkle the shredded cheese on top.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Serve warm, garnished with additional cilantro if desired.
