Ingredients

  • Corn tortillas - 4 large
  • Olive oil - 2 tablespoons
  • Red enchilada sauce - 240ml
  • Black beans - 1 cup (cooked)
  • Cooked chicken breast - 150g (shredded)
  • Greek yogurt - 100g
  • Shredded mozzarella cheese - 100g
  • Fresh cilantro - 2 tablespoons (chopped)
  • Avocado - 1 small (sliced)
  • Lime - 1 (cut into wedges)
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the corn tortillas into triangles and spread them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10-12 minutes or until crispy.
  3. In a mixing bowl, combine the red enchilada sauce, black beans, and shredded chicken. Mix well.
  4. Once the tortilla chips are baked, remove them from the oven and lower the temperature to 160°C (320°F).
  5. In a baking dish, layer half of the baked tortilla chips, followed by half of the enchilada mixture, and top with half of the shredded mozzarella cheese.
  6. Repeat the layers with the remaining tortilla chips, enchilada mixture, and cheese.
  7. Bake in the oven for an additional 15-20 minutes, until the cheese is melted and bubbly.
  8. Remove from the oven and let it cool for a few minutes. Top with Greek yogurt, fresh cilantro, and sliced avocado.
  9. Serve with lime wedges on the side.
