Ingredients
- Corn tortillas - 4 large
- Olive oil - 2 tablespoons
- Red enchilada sauce - 240ml
- Black beans - 1 cup (cooked)
- Cooked chicken breast - 150g (shredded)
- Greek yogurt - 100g
- Shredded mozzarella cheese - 100g
- Fresh cilantro - 2 tablespoons (chopped)
- Avocado - 1 small (sliced)
- Lime - 1 (cut into wedges)
- Salt - to taste
- Pepper - to taste
Steps
- Preheat your oven to 180°C (350°F).
- Cut the corn tortillas into triangles and spread them on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 10-12 minutes or until crispy.
- In a mixing bowl, combine the red enchilada sauce, black beans, and shredded chicken. Mix well.
- Once the tortilla chips are baked, remove them from the oven and lower the temperature to 160°C (320°F).
- In a baking dish, layer half of the baked tortilla chips, followed by half of the enchilada mixture, and top with half of the shredded mozzarella cheese.
- Repeat the layers with the remaining tortilla chips, enchilada mixture, and cheese.
- Bake in the oven for an additional 15-20 minutes, until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Top with Greek yogurt, fresh cilantro, and sliced avocado.
- Serve with lime wedges on the side.
