Ingredients
- Cauliflower - 300 grams, chopped into small florets
- Olive oil - 2 tablespoons
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 pieces
- Avocado - 1 medium, sliced
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the chopped cauliflower florets with olive oil, ground cumin, smoked paprika, chili powder, garlic powder, salt, and black pepper. Toss until the cauliflower is evenly coated.
- Spread the seasoned cauliflower on a baking sheet in a single layer.
- Bake in the preheated oven for 20-25 minutes, or until the cauliflower is golden and tender, stirring halfway through for even cooking.
- While the cauliflower is baking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable.
- Once the cauliflower is done, remove it from the oven and assemble the tacos by placing a portion of the roasted cauliflower on each tortilla.
- Top each taco with sliced avocado and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
