- Corn (fresh or frozen) - 1 cup (150g)
- Red bell pepper - 1 small (about 100g), diced
- Onion - 1 small (about 70g), diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons (30ml)
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cheddar cheese (or vegan alternative) - 1 cup (100g), shredded
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat your oven to 190°C (375°F).
- Wash and slice the zucchini into thin rounds.
- In a skillet over medium heat, add olive oil and sauté the onion and garlic until translucent, about 5 minutes.
- Add the diced red bell pepper, zucchini, corn, cumin, chili powder, salt, and black pepper to the skillet. Cook for another 5-7 minutes until the zucchini is slightly tender.
- Transfer the vegetable mixture into a baking dish and spread it evenly.
- Sprinkle the shredded cheddar cheese over the top of the vegetables.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh cilantro, and serve warm.
