Ingredients

  • Zucchini - 2 medium (about 300g)
  • Corn (fresh or frozen) - 1 cup (150g)
  • Red bell pepper - 1 small (about 100g), diced
  • Onion - 1 small (about 70g), diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons (30ml)
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cheddar cheese (or vegan alternative) - 1 cup (100g), shredded
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Wash and slice the zucchini into thin rounds.
  3. In a skillet over medium heat, add olive oil and sauté the onion and garlic until translucent, about 5 minutes.
  4. Add the diced red bell pepper, zucchini, corn, cumin, chili powder, salt, and black pepper to the skillet. Cook for another 5-7 minutes until the zucchini is slightly tender.
  5. Transfer the vegetable mixture into a baking dish and spread it evenly.
  6. Sprinkle the shredded cheddar cheese over the top of the vegetables.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven, garnish with fresh cilantro, and serve warm.
