- Red bell pepper - 1 medium, diced
- Green olives - 50 grams, sliced
- Tomato paste - 2 tablespoons
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cauliflower rice - 200 grams
- Cheddar cheese - 50 grams, shredded
- Fresh cilantro - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
- Stir in the diced red bell pepper, green olives, tomato paste, cumin, oregano, paprika, salt, and black pepper. Cook for another 5 minutes until the peppers start to soften.
- Mix in the cauliflower rice and combine well, allowing the mixture to heat through for another 2-3 minutes.
- Transfer the beef and vegetable mixture to a baking dish, spreading it evenly.
- Top with shredded cheddar cheese.
- Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
