Ingredients

  • Ground beef - 300 grams

  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Green olives - 50 grams, sliced
  • Tomato paste - 2 tablespoons
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cauliflower rice - 200 grams
  • Cheddar cheese - 50 grams, shredded
  • Fresh cilantro - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, breaking it apart and cooking until browned, about 5-7 minutes.
  4. Stir in the diced red bell pepper, green olives, tomato paste, cumin, oregano, paprika, salt, and black pepper. Cook for another 5 minutes until the peppers start to soften.
  5. Mix in the cauliflower rice and combine well, allowing the mixture to heat through for another 2-3 minutes.
  6. Transfer the beef and vegetable mixture to a baking dish, spreading it evenly.
  7. Top with shredded cheddar cheese.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
