- Whole wheat tortillas - 2 large
- Canned black beans - 240 grams (1 cup), drained and rinsed
- Cooked brown rice - 120 grams (1/2 cup)
- Fresh spinach - 60 grams (2 cups, chopped)
- Diced tomatoes - 120 grams (1/2 cup)
- Red onion - 50 grams (1/4 cup, finely chopped)
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Shredded low-fat cheese - 60 grams (1/2 cup)
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 190°C (375°F).
- In a large mixing bowl, combine the black beans, cooked brown rice, chopped spinach, diced tomatoes, red onion, cumin, chili powder, garlic powder, and salt. Mix well until all ingredients are evenly incorporated.
- Lay out the whole wheat tortillas on a flat surface. Spoon the bean mixture evenly onto the center of each tortilla, then sprinkle half of the shredded cheese on top of the filling.
- Fold the sides of the tortillas inwards, then roll them up from the bottom to form burritos. Place the burritos seam-side down in a baking dish.
- Drizzle the olive oil over the burritos and sprinkle the remaining cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, let cool for a few minutes, and garnish with fresh cilantro before serving.
