Ingredients
- Corn tortillas - 4 small
- Ripe avocados - 2 medium
- Black beans (canned, drained and rinsed) - 1 cup
- Cherry tomatoes (halved) - 1 cup
- Red onion (finely chopped) - 1/4 cup
- Fresh cilantro (chopped) - 1/4 cup
- Lime (juiced) - 1 medium
- Cumin powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Vegan cheese (shredded) - 1/2 cup (optional)
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, mash the ripe avocados with lime juice, cumin, salt, and black pepper until smooth.
- In another bowl, combine the black beans, cherry tomatoes, red onion, and cilantro. Mix well.
- Spread a thin layer of olive oil on a baking sheet.
- Place the corn tortillas on the baking sheet and spoon a generous amount of the avocado mixture onto each tortilla.
- Top with the black bean mixture, distributing evenly among the tacos.
- If using, sprinkle vegan cheese on top of the filled tacos.
- Bake in the preheated oven for 15-20 minutes, or until the tortillas are crispy and the filling is warmed through.
- Remove from the oven and let cool slightly before serving.
