Ingredients

  • Corn tortillas - 4 small
  • Ripe avocados - 2 medium
  • Black beans (canned, drained and rinsed) - 1 cup
  • Cherry tomatoes (halved) - 1 cup
  • Red onion (finely chopped) - 1/4 cup
  • Fresh cilantro (chopped) - 1/4 cup
  • Lime (juiced) - 1 medium
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Vegan cheese (shredded) - 1/2 cup (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, mash the ripe avocados with lime juice, cumin, salt, and black pepper until smooth.
  3. In another bowl, combine the black beans, cherry tomatoes, red onion, and cilantro. Mix well.
  4. Spread a thin layer of olive oil on a baking sheet.
  5. Place the corn tortillas on the baking sheet and spoon a generous amount of the avocado mixture onto each tortilla.
  6. Top with the black bean mixture, distributing evenly among the tacos.
  7. If using, sprinkle vegan cheese on top of the filled tacos.
  8. Bake in the preheated oven for 15-20 minutes, or until the tortillas are crispy and the filling is warmed through.
  9. Remove from the oven and let cool slightly before serving.
