Ingredients

  • Ripe avocados - 2
  • Corn tortillas - 4
  • Diced tomatoes - 400 grams (1 can)
  • Black beans - 200 grams (1 cup, drained and rinsed)
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish
  • Lime juice - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a pan, heat olive oil over medium heat. Add diced onion and sauté until softened, about 3-4 minutes. Add minced garlic and sauté for another 1 minute.
  3. Add the diced tomatoes, black beans, cumin, chili powder, salt, and pepper to the pan. Stir well and cook for 5 minutes until heated through. Remove from heat.
  4. Slice the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with lime juice, salt, and pepper until creamy.
  5. Take a corn tortilla and spread a layer of mashed avocado in the center, followed by a couple of tablespoons of the tomato and bean mixture. Roll the tortilla tightly and place seam-side down in a baking dish. Repeat with remaining tortillas.
  6. Pour any remaining tomato and bean mixture over the rolled enchiladas in the baking dish.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  8. Remove the foil and bake for an additional 5-10 minutes until heated through and slightly crisp on top.
  9. Garnish with fresh cilantro before serving.
