Ingredients
- Ripe avocados - 2
- Corn tortillas - 4
- Diced tomatoes - 400 grams (1 can)
- Black beans - 200 grams (1 cup, drained and rinsed)
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Fresh cilantro - for garnish
- Lime juice - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a pan, heat olive oil over medium heat. Add diced onion and sauté until softened, about 3-4 minutes. Add minced garlic and sauté for another 1 minute.
- Add the diced tomatoes, black beans, cumin, chili powder, salt, and pepper to the pan. Stir well and cook for 5 minutes until heated through. Remove from heat.
- Slice the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with lime juice, salt, and pepper until creamy.
- Take a corn tortilla and spread a layer of mashed avocado in the center, followed by a couple of tablespoons of the tomato and bean mixture. Roll the tortilla tightly and place seam-side down in a baking dish. Repeat with remaining tortillas.
- Pour any remaining tomato and bean mixture over the rolled enchiladas in the baking dish.
- Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 5-10 minutes until heated through and slightly crisp on top.
- Garnish with fresh cilantro before serving.
