Ingredients

  • Avocado - 1 large
  • Eggs - 2 large
  • Cotija cheese - 30 grams, crumbled
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chili powder - 1/4 teaspoon
  • Olive oil - 1 teaspoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Cut the avocado in half and remove the pit.
  3. Scoop out a little bit of the flesh from each half to create enough space for the eggs.
  4. Place the avocado halves in a baking dish, cut side up.
  5. Drizzle olive oil over the avocado halves and season with salt, black pepper, and chili powder.
  6. Crack an egg into each avocado half, taking care not to spill any egg white.
  7. Sprinkle crumbled Cotija cheese over the top of the eggs.
  8. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny.
  9. Remove from the oven and drizzle with lime juice and garnish with chopped cilantro before serving.
