- Avocado - 1 large
- Eggs - 2 large
- Cotija cheese - 30 grams, crumbled
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Chili powder - 1/4 teaspoon
- Olive oil - 1 teaspoon
Steps
- Preheat your oven to 190°C (375°F).
- Cut the avocado in half and remove the pit.
- Scoop out a little bit of the flesh from each half to create enough space for the eggs.
- Place the avocado halves in a baking dish, cut side up.
- Drizzle olive oil over the avocado halves and season with salt, black pepper, and chili powder.
- Crack an egg into each avocado half, taking care not to spill any egg white.
- Sprinkle crumbled Cotija cheese over the top of the eggs.
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks are still runny.
- Remove from the oven and drizzle with lime juice and garnish with chopped cilantro before serving.
