- Whole wheat pizza dough - 200 grams
- Olive oil - 1 tablespoon
- Black beans - 100 grams, drained and rinsed
- Corn kernels - 50 grams, fresh or frozen
- Red bell pepper - 1 medium, diced
- Red onion - 1/2 medium, thinly sliced
- Zucchini - 1 small, thinly sliced
- Cherry tomatoes - 100 grams, halved
- Avocado - 1 small, sliced
- Fresh cilantro - 2 tablespoons, chopped
- Chipotle sauce - 2 tablespoons
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- Roll out the whole wheat pizza dough on a floured surface to your desired thickness, then transfer it to a baking tray lined with parchment paper.
- Brush the dough lightly with olive oil and bake for 5 minutes until it's just starting to set.
- In a bowl, mix the black beans, corn, diced red bell pepper, sliced red onion, and zucchini. Season with lime juice, salt, and pepper to taste.
- Remove the pizza crust from the oven and evenly spread the black bean and vegetable mixture over the crust.
- Top with halved cherry tomatoes and drizzle the chipotle sauce over the top.
- Return the pizza to the oven and bake for an additional 10-12 minutes until the vegetables are tender and the crust is golden.
- Once out of the oven, top with sliced avocado and chopped cilantro.
- Slice and serve immediately.
