Ingredients

  • young green jackfruit - 400 grams (drained and shredded)
  • all-purpose flour - 100 grams
  • cornstarch - 30 grams
  • paprika - 1 teaspoon
  • cumin - 1 teaspoon
  • garlic powder - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • water - 150 ml
  • oil - for frying
  • corn tortillas - 4 pieces
  • cabbage - 100 grams (shredded)
  • avocado - 1 (sliced)
  • cilantro - 10 grams (chopped)
  • lime - 1 (cut into wedges)
  • vegan mayo - 2 tablespoons
  • chipotle in adobo sauce - 1 tablespoon

Steps

  1. In a bowl, combine the all-purpose flour, cornstarch, paprika, cumin, garlic powder, salt, and black pepper.
  2. Gradually add water to the dry ingredients, whisking until a smooth batter forms.
  3. Heat oil in a pan over medium heat for frying.
  4. Dip the shredded jackfruit into the batter, ensuring it's well-coated, then carefully place it in the hot oil.
  5. Fry the jackfruit for about 4-5 minutes until golden and crispy. Remove and place on a paper towel to drain excess oil.
  6. In a small bowl, mix the vegan mayo with the chipotle in adobo sauce to create the chipotle crema.
  7. Warm the corn tortillas in a dry skillet or microwave.
  8. Assemble the tacos by placing crispy jackfruit on the tortillas, topping with shredded cabbage, avocado slices, and chopped cilantro.
  9. Drizzle with chipotle crema and serve with lime wedges on the side.
