Ingredients
- Cauliflower - 300 grams (for crust)
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 50 grams, grated
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Avocado - 1 medium, diced
- Cherry tomatoes - 100 grams, halved
- Red onion - 1/4 medium, finely chopped
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Jalapeño - 1 small, finely chopped (optional)
Steps
- Preheat the oven to 220°C (425°F).
- Rinse and dry the cauliflower, then chop it into florets.
- In a food processor, pulse the cauliflower florets until they resemble rice or fine crumbs.
- Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes until softened.
- Let the cauliflower cool slightly, then transfer it to a clean kitchen towel and wring out as much moisture as possible.
- In a mixing bowl, combine the cauliflower, shredded mozzarella, grated parmesan, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
- On a baking sheet lined with parchment paper, spread the cauliflower mixture into a circular shape, about 1/2 inch thick, to form the crust.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and crispy.
- While the crust is baking, prepare the avocado salsa: In a bowl, combine diced avocado, halved cherry tomatoes, chopped red onion, cilantro, lime juice, and jalapeño (if using). Mix gently to combine.
- Once the crust is done, remove it from the oven and let it cool slightly before topping with the avocado salsa.
- Slice and serve immediately.
