Ingredients

  • Cauliflower - 300 grams (for crust)
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1 medium, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/4 medium, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Jalapeño - 1 small, finely chopped (optional)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Rinse and dry the cauliflower, then chop it into florets.
  3. In a food processor, pulse the cauliflower florets until they resemble rice or fine crumbs.
  4. Place the cauliflower in a microwave-safe bowl and microwave for 5 minutes until softened.
  5. Let the cauliflower cool slightly, then transfer it to a clean kitchen towel and wring out as much moisture as possible.
  6. In a mixing bowl, combine the cauliflower, shredded mozzarella, grated parmesan, egg, garlic powder, oregano, salt, and black pepper. Mix until well combined.
  7. On a baking sheet lined with parchment paper, spread the cauliflower mixture into a circular shape, about 1/2 inch thick, to form the crust.
  8. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and crispy.
  9. While the crust is baking, prepare the avocado salsa: In a bowl, combine diced avocado, halved cherry tomatoes, chopped red onion, cilantro, lime juice, and jalapeño (if using). Mix gently to combine.
  10. Once the crust is done, remove it from the oven and let it cool slightly before topping with the avocado salsa.
  11. Slice and serve immediately.
