  • Avocado - 2 ripe
  • Almond flour - 1 cup
  • Mozzarella cheese - 1 cup, shredded
  • Cream cheese - 50 grams, softened
  • Egg - 1 large
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Jalapeño - 1 small, sliced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, shredded mozzarella, cream cheese, egg, salt, and black pepper. Mix until a dough forms.
  3. Press the dough onto a parchment-lined baking sheet to form a pizza base, about 1 cm thick.
  4. Bake the crust in the preheated oven for 15 minutes, or until golden brown.
  5. While the crust is baking, mash the avocados in a bowl and mix in lime juice, cilantro, and a pinch of salt to taste.
  6. Once the crust is done, spread the avocado mixture evenly over the baked crust.
  7. Top the avocado spread with halved cherry tomatoes, sliced red onion, and jalapeño.
  8. Drizzle with olive oil and bake for an additional 5-7 minutes until the toppings are slightly cooked.
