Ingredients

  • Zucchini - 2 medium, spiralized
  • Ripe avocado - 1 large
  • Lime juice - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 1/2 cup, halved
  • Red onion - 1/4 cup, finely chopped
  • Jalapeño - 1 small, finely chopped (optional)

Steps

  1. Spiralize the zucchini using a spiralizer and set aside.
  2. In a blender or food processor, combine the ripe avocado, lime juice, cilantro, garlic, olive oil, salt, and black pepper. Blend until smooth and creamy.
  3. In a large mixing bowl, combine the spiralized zucchini with the avocado sauce, tossing until the zucchini is well coated.
