Ingredients

  • Basmati rice - 1 cup
  • Vegetable broth - 2 cups
  • Fresh cilantro - 1/2 cup, packed
  • Fresh parsley - 1/4 cup, packed
  • Jalapeño pepper - 1 small, seeds removed and chopped
  • Garlic - 2 cloves, minced
  • Shallot - 1 small, diced
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.
  2. In a blender, combine the cilantro, parsley, jalapeño, garlic, lime juice, and a pinch of salt. Blend until smooth, adding a little vegetable broth if necessary to help with blending.
  3. In a medium saucepan, heat the olive oil over medium heat. Add the diced shallot and sauté for 2-3 minutes until translucent.
  4. Stir in the rinsed rice and toast for about 2 minutes, stirring frequently to prevent sticking.
  5. Add the blended herb mixture to the rice and stir to combine, then pour in the vegetable broth and add the remaining salt and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
  7. Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff with a fork before serving.
