- Fresh parsley - 1/4 cup, packed
- Jalapeño pepper - 1 small, seeds removed and chopped
- Garlic - 2 cloves, minced
- Shallot - 1 small, diced
- Olive oil - 2 tablespoons
- Lime juice - 2 tablespoons
- Salt - 1/2 teaspoon

Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain and set aside.

- Stir in the rinsed rice and toast for about 2 minutes, stirring frequently to prevent sticking.
- Add the blended herb mixture to the rice and stir to combine, then pour in the vegetable broth and add the remaining salt and black pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes until the rice is cooked and the liquid is absorbed.
