Ingredients

  • Soy granules - 100 grams
  • Cauliflower - 200 grams (grated or riced)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Onion - 1 small (diced)
  • Tomato - 1 medium (diced)
  • Bell pepper - 1/2 medium (diced)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable broth - 250 milliliters
  • Cilantro - 2 tablespoons (chopped, for garnish)

Steps

  1. In a medium bowl, soak the soy granules in warm water for about 10 minutes, then drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).
  3. Add the diced tomato and bell pepper to the skillet, cooking for another 3 minutes until softened.
  4. Stir in the soaked soy granules, cumin, paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  5. Add the riced cauliflower and vegetable broth to the skillet. Mix well and bring to a gentle simmer. Cover and cook for about 10-12 minutes until the cauliflower is tender and the liquid is absorbed.
  6. Remove from heat and fluff with a fork. Garnish with chopped cilantro before serving.
