Ingredients

  • Nopal (cactus pads) - 200 grams, diced
  • Cauliflower rice - 300 grams
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Chili powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and minced garlic, sauté until onions are translucent (about 3-4 minutes).
  3. Stir in the diced nopales and cook for another 5 minutes until they soften.
  4. Add the diced green bell pepper and tomato, cooking for an additional 3 minutes.
  5. Mix in the cauliflower rice, chili powder, cumin, salt, and black pepper. Stir well to combine.
  6. Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the cauliflower rice is tender.
  7. Remove from heat and garnish with fresh cilantro before serving.
