- Green bell pepper - 1/2, diced
- Chili powder - 1 teaspoon
- Cumin - 1/2 teaspoon

Steps
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and minced garlic, sauté until onions are translucent (about 3-4 minutes).
- Stir in the diced nopales and cook for another 5 minutes until they soften.
- Add the diced green bell pepper and tomato, cooking for an additional 3 minutes.
- Mix in the cauliflower rice, chili powder, cumin, salt, and black pepper. Stir well to combine.
- Cover the skillet and let it cook for about 10-12 minutes, stirring occasionally, until the cauliflower rice is tender.
- Remove from heat and garnish with fresh cilantro before serving.
