Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato - 1 medium, diced
  • Bell pepper - 1/2 medium, diced
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Remove the leaves from the cauliflower and cut it into florets. In a food processor, pulse the florets until they reach a rice-like consistency.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the diced tomato and bell pepper to the skillet, cooking for another 3-4 minutes until softened.
  4. Stir in the cauliflower rice, cumin, chili powder, salt, and black pepper. Mix well and cook for about 5-7 minutes until the cauliflower is tender but not mushy.
  5. Remove from heat and stir in chopped cilantro and lime juice. Serve warm as a side dish or light main course.
