Ingredients
- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Tomato - 1 medium, diced
- Bell pepper - 1/2 medium, diced
- Cumin - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Remove the leaves from the cauliflower and cut it into florets. In a food processor, pulse the florets until they reach a rice-like consistency.
- Heat olive oil in a large skillet over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced tomato and bell pepper to the skillet, cooking for another 3-4 minutes until softened.
- Stir in the cauliflower rice, cumin, chili powder, salt, and black pepper. Mix well and cook for about 5-7 minutes until the cauliflower is tender but not mushy.
- Remove from heat and stir in chopped cilantro and lime juice. Serve warm as a side dish or light main course.
