  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons (chopped)
  • Lime - 1 (for serving)

Steps

  1. Remove the leaves and core from the cauliflower, then chop it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
  2. Peel and thinly slice the onion. Mince the garlic cloves.
  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for about 10-12 minutes, stirring occasionally, until the onions are caramelized and golden brown.
  4. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
