- Fresh cilantro - 2 tablespoons (chopped)

Steps
- Remove the leaves and core from the cauliflower, then chop it into florets. Pulse the florets in a food processor until they resemble rice grains. Set aside.
- Peel and thinly slice the onion. Mince the garlic cloves.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook for about 10-12 minutes, stirring occasionally, until the onions are caramelized and golden brown.
