Ingredients

  • Long-grain rice - 1 cup
  • Vegetable broth - 2 cups
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, diced
  • Green beans - 100 grams, trimmed and cut into 1-inch pieces
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Onion - 1/2 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the diced red bell pepper, carrot, green beans, and zucchini, cooking for an additional 5 minutes until the vegetables are tender but still crisp.
  4. Add the rice to the vegetable mixture, stirring to coat the rice with the oil and vegetables.
  5. Pour in the vegetable broth, then stir in the ground cumin, smoked paprika, salt, and black pepper.
  6. Bring the mixture to a boil, then reduce the heat to low and cover the saucepan. Let it simmer for 18-20 minutes, or until the rice is cooked and has absorbed the liquid.
  7. Remove from heat and let it sit, covered, for 5 minutes.
  8. Fluff the rice with a fork, garnish with fresh cilantro, and serve warm.
