  • Paprika - 1 teaspoon

  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Rinse the rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another 1 minute until fragrant.
  4. Stir in the diced tomatoes, cumin, paprika, salt, and black pepper. Cook for about 5 minutes, allowing the tomatoes to soften and release their juices.
  5. Add the rinsed rice to the saucepan and stir well to coat the rice with the tomato mixture.
  6. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.
  7. Remove from heat and let it sit covered for an additional 5 minutes.
  8. Fluff the rice with a fork, then stir in the chopped cilantro and lime juice before serving.
