Ingredients
- Long-grain rice - 1 cup
- Water - 2 cups
- Chicken breast - 200 grams, cooked and shredded
- Tomato sauce - 1/2 cup
- Chipotle pepper in adobo sauce - 1 tablespoon, minced
- Onion - 1 medium, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- In a medium saucepan, heat the olive oil over medium heat. Add the sliced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Stir in the cooked and shredded chicken, tomato sauce, chipotle pepper, cumin, salt, and black pepper. Cook for an additional 5 minutes until heated through.
- In a separate pot, rinse the rice under cold water until the water runs clear. Add the rice and water to the pot, and bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
- Once the rice is done, fluff it with a fork and serve it topped with the chicken tinga mixture. Garnish with fresh cilantro.
