Ingredients

  • Long-grain rice - 1 cup
  • Water - 2 cups
  • Chicken breast - 200 grams, cooked and shredded
  • Tomato sauce - 1/2 cup
  • Chipotle pepper in adobo sauce - 1 tablespoon, minced
  • Onion - 1 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium saucepan, heat the olive oil over medium heat. Add the sliced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Stir in the cooked and shredded chicken, tomato sauce, chipotle pepper, cumin, salt, and black pepper. Cook for an additional 5 minutes until heated through.
  3. In a separate pot, rinse the rice under cold water until the water runs clear. Add the rice and water to the pot, and bring to a boil over high heat.
  4. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and water is absorbed.
  5. Once the rice is done, fluff it with a fork and serve it topped with the chicken tinga mixture. Garnish with fresh cilantro.
