Ingredients
- Brown rice - 1 cup
- Water - 2 cups
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Red bell pepper - 1/2, diced
- Corn - 1/2 cup, fresh or frozen
- Black beans - 1 cup, rinsed and drained
- Cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- For Salsa Roja: Tomatoes - 2 medium, diced
- Onion - 1/4, finely chopped
- Jalapeño - 1, minced
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - 1/4 teaspoon
- For Salsa Verde: Tomatillos - 2 medium, husked and diced
- Garlic - 1 clove, minced
- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - 1/4 teaspoon
Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until translucent, about 3-4 minutes.
- Add the rinsed brown rice to the pot, stirring to coat it in the oil. Toast the rice for about 2 minutes.
- Pour in the water, add salt and pepper, then bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 25-30 minutes or until the rice is tender and water is absorbed.
- While the rice is cooking, prepare the Salsa Roja by combining diced tomatoes, finely chopped onion, minced jalapeño, cilantro, lime juice, and salt in a bowl. Mix well and set aside.
- For the Salsa Verde, blend the diced tomatillos, minced garlic, cilantro, lime juice, and salt until smooth. Adjust seasoning as needed.
- Once the rice is cooked, fluff it with a fork and mix in the black beans, corn, lime juice, and chopped cilantro.
- To serve, plate the rice mixture and generously top with both salsas. Enjoy!
