Ingredients

  • Brown rice - 1 cup
  • Water - 2 cups
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Red bell pepper - 1/2, diced
  • Corn - 1/2 cup, fresh or frozen
  • Black beans - 1 cup, rinsed and drained
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • For Salsa Roja: Tomatoes - 2 medium, diced
  • Onion - 1/4, finely chopped
  • Jalapeño - 1, minced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - 1/4 teaspoon
  • For Salsa Verde: Tomatillos - 2 medium, husked and diced
  • Garlic - 1 clove, minced
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - 1/4 teaspoon

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then drain.
  2. In a medium pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, sautéing until translucent, about 3-4 minutes.
  3. Add the rinsed brown rice to the pot, stirring to coat it in the oil. Toast the rice for about 2 minutes.
  4. Pour in the water, add salt and pepper, then bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 25-30 minutes or until the rice is tender and water is absorbed.
  5. While the rice is cooking, prepare the Salsa Roja by combining diced tomatoes, finely chopped onion, minced jalapeño, cilantro, lime juice, and salt in a bowl. Mix well and set aside.
  6. For the Salsa Verde, blend the diced tomatillos, minced garlic, cilantro, lime juice, and salt until smooth. Adjust seasoning as needed.
  7. Once the rice is cooked, fluff it with a fork and mix in the black beans, corn, lime juice, and chopped cilantro.
  8. To serve, plate the rice mixture and generously top with both salsas. Enjoy!
